Ingredients

  • 1 cup pumpkin puree (not pumpkin pie filling)

  • 2 ½ cups rolled oats (gluten-free if needed)

  • 1 egg

  • ½ teaspoon cinnamon (optional)


Instructions


  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, mix the pumpkin puree and egg until smooth.

  3. Stir in oats and cinnamon until a dough forms.

  4. Roll out the dough and cut into fun shapes using cookie cutters.

  5. Place on a lined baking tray and bake for 25–30 minutes or until firm and golden.
