2 tablespoons coconut oil (melted)
1 teaspoon ground cinnamon
1 cup oat flour (or finely blended rolled oats)
1 egg
2–3 tablespoons water (as needed)
Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper.
Mix the wet ingredients. In a medium bowl, combine peanut butter, melted coconut oil, egg, and cinnamon. Stir until smooth.
Add the flour. Gradually mix in the oat flour until a soft dough forms. If the dough is too thick, add water one tablespoon at a time.
