1 cup oat flour (or finely ground oats)
½ cup unsweetened applesauce
1 ripe banana, mashed
1 large egg
¼ cup natural peanut butter (xylitol-free)
1 tablespoon honey
½ teaspoon cinnamon
½ teaspoon baking powder
¼ cup water or unsweetened almond milk
Preheat oven to 350°F (175°C) and line a muffin tin or bone-shaped mold.
In a bowl, whisk together mashed banana, applesauce, peanut butter, egg, and honey.
Add oat flour, cinnamon, and baking powder. Stir until combined.
Slowly mix in water or almond milk until batter is thick but spoonable.
Fill molds about ¾ full.
Bake for 18–22 minutes or until a toothpick comes out clean.
Cool completely before adding optional frosting.
Top with a small dollop of yogurt-peanut butter frosting and serve.
Store cupcakes in an airtight container in the refrigerator for up to 5 days.
For longer storage, freeze for up to 2 months and thaw before serving.
