1 cup mashed cooked sweet potato
1 cup fresh spinach, finely chopped
2 cups oat flour
1 egg
2 tablespoons olive oil
¼ cup water (as needed for dough consistency)
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine mashed sweet potato, egg, and olive oil. Mix well.
Stir in chopped spinach until evenly distributed.
