1 cup mashed cooked sweet potato
1½ cups oat flour
½ teaspoon ground cinnamon
1 large egg
1 tablespoon coconut oil, melted
2–4 tablespoons water (as needed)
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine mashed sweet potato, egg, and melted coconut oil.
Add oat flour and cinnamon. Mix until a dough forms.
If dough feels dry, add water one tablespoon at a time.
Roll dough to about ¼-inch thickness on a lightly floured surface.
Cut into bone or shamrock shapes.
Place treats on baking sheet and bake for 25 minutes, until lightly golden.
Let cool completely before serving.
Store in an airtight container at room temperature for up to 5 days
