Preheat oven to 175°C / 350°F and line a baking sheet with parchment paper.
Mix wet ingredients: In a medium bowl, combine pumpkin purée, peanut butter, and egg until smooth.
Add dry ingredients: Stir in oat flour and cinnamon.
