1 cup pure pumpkin purée (100% pumpkin, not pie filling)
½ cup natural peanut butter (xylitol-free)
2½–3 cups old-fashioned oats (or oat flour)
¼ teaspoon ground cinnamon (optional)
In a medium bowl, mix the pumpkin purée and peanut butter until smooth.
Stir in the oats (or oat flour) a little at a time until a soft, non-sticky dough forms.
Sprinkle in cinnamon if using and mix well.
Roll the dough out between two sheets of parchment paper (about ¼-inch thick).
