1 cup unsweetened shredded coconut
1 cup oat flour (or finely ground oats)
1/4 cup coconut oil, melted
1 large egg
1–2 tablespoons fresh mint, finely chopped
2–3 tablespoons water (as needed)
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine shredded coconut and oat flour.
Add melted coconut oil, egg, and chopped mint. Stir until a dough forms.
Gradually add water, one tablespoon at a time, until the dough is soft but not sticky.
Roll dough out on a lightly floured surface to about 1/4-inch thickness.
Cut into bone shapes (or any fun shape you like).
Place treats on baking sheet and bake for 18–22 minutes, or until lightly golden and firm.
Let cool completely before serving.
Store treats in an airtight container at room temperature for up to 5 days.
