1 cup oat flour (or finely ground oats)
1/2 cup unsweetened applesauce
1/4 cup natural peanut butter (xylitol-free)
1/2 cup shredded carrot
1 large egg
1 teaspoon baking powder
2–4 tablespoons water or unsweetened almond milk (as needed)
Optional Yogurt Frosting:
1/2 cup plain Greek yogurt
1 tablespoon peanut butter
Preheat oven to 350°F (175°C) and lightly grease a small cake pan or silicone mold.
In a bowl, whisk together oat flour and baking powder.
Add applesauce, peanut butter, egg, and shredded carrot. Mix until combined.
Add water or almond milk a tablespoon at a time until batter is thick but spreadable.
Pour batter into prepared pan and smooth the top.
Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
Allow cake to cool completely before adding optional frosting.
Mix yogurt and peanut butter together and spread lightly over the top.
Store leftovers in an airtight container in the refrigerator for up to 5 days.
For longer storage, slice and freeze portions for up to 2 months. Thaw before serving.
