2 cups almond flour
1 teaspoon baking powder
1/4 cup natural peanut butter (xylitol-free)
1/2 cup pumpkin purée (plain, unsweetened)
2 large eggs
1/4 cup unsweetened applesauce
1 tablespoon coconut oil, melted
Optional topping: plain Greek yogurt or mashed banana
Preheat oven to 350°F (175°C) and line a baking pan or silicone mold with parchment.
In a large bowl, mix almond flour and baking powder.
Add peanut butter, pumpkin purée, eggs, applesauce, and coconut oil.
