1 cup whole wheat flour
½ cup oat flour (or finely ground oats)
½ teaspoon baking powder (aluminum-free)
1 large egg
½ cup unsweetened applesauce
¼ cup plain Greek yogurt (unsweetened, unflavored)
½ cup fresh strawberries, finely chopped
2 tablespoons coconut oil, melted
¼ cup water (as needed for batter consistency)
Preheat oven to 350°F (175°C) and lightly grease a bone-shaped silicone mold or small baking pan.
In a large bowl, whisk together whole wheat flour, oat flour, and baking powder.
In another bowl, combine egg, applesauce, Greek yogurt, melted coconut oil, and chopped strawberries.
Add wet ingredients to dry ingredients and stir until a thick batter forms. Add water gradually if batter is too thick.
Spoon batter into molds or pan and smooth the tops.
Bake for 22–25 minutes, or until a toothpick inserted comes out clean.
Allow cakes to cool completely before serving.
Store cooled treats in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze treats for up to 2 months and thaw as needed.
