1 cup fresh cucumber, finely grated
1 tablespoon fresh mint, finely chopped
1 cup oat flour
½ cup rolled oats
1 large egg
2 tablespoons plain unsweetened yogurt
1 tablespoon coconut oil, melted
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, mix grated cucumber, mint, egg, yogurt, and coconut oil.
Stir in oat flour and rolled oats until a soft dough forms.
Roll dough to about ¼-inch thickness and cut into bone shapes.
Place on baking sheet and bake for 22–25 minutes until lightly golden.
Cool completely before serving.
Store treats in an airtight container in the refrigerator for up to 7 days. For longer storage, freeze for up to 3 months and thaw as needed.
