1 cup pure pumpkin purée (unsweetened)
½ cup plain unsweetened yogurt
¼ cup melted coconut oil
2½ cups whole wheat flour (or oat flour)
1 egg
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, mix pumpkin purée, yogurt, coconut oil, and egg until smooth.
Gradually add flour, stirring until a soft dough forms.
Roll dough to about ¼-inch thickness on a lightly floured surface.
Cut into shapes using cookie cutters.
Place treats on prepared baking sheet.
Bake for 25 minutes or until firm.
Cool completely before serving.
Store treats in an airtight container at room temperature for up to 5 days. For longer storage, keep them refrigerated for up to 2 weeks or freeze for up to 3 months.
