Last Halloween, we had a few friends over for pumpkin carving. Everyone brought something for the table — I brought pupcakes topped with bright orange pumpkin frosting. As soon as Ruby saw them, she thought they were for the humans and waited politely for a piece. Her reaction when she realized they were hers was priceless — a big happy tail wag and a messy orange nose.

Instructions:


  1. Preheat oven to 350°F (175°C).

  2. In a bowl, mix oat flour, pumpkin puree, egg, and coconut oil until combined.

  3. Spoon into lined mini muffin tins, filling about ¾ full.

  4. Bake for 15 minutes, or until a toothpick comes out clean.

  5. Cool completely.

  6. For frosting, beat cream cheese and pumpkin puree until smooth.

  7. Pipe or spread onto cooled pupcakes.
